Mero Con Azafran y Pure de Papas...

Mero con Azafran y Pure de Papas, could be Grouper / Halibut with Saffron and Mashed Potatoes.-

Saffron threads
7 tbl orange juice
8 tomatos, chopped
4 garlic cloves, chopped
1/2 Basil bunch, chopped
30 g black olives, cut in rounds
30 g green olives, cut in rounds
60 g Capers
2 tsp orange zest
3 tbl olive oil
4 tbl dry cherry
salt & pepper
600 g Mero fillets
600 g Potatoes
1/2 bunch Thyme leaves, chopped

Dissolve the saffron in 4 tsp hot orange juice. Mix this with the tomatoes, garlic, basil, olives, capers, 1 tsp orange zest, 1 tsp oil and the cherry. Salt & pepper this mix.
Pre-heat oven to 400 F / 200 C. Salt & pepper fish and lay on buttered baking pan and pour tomato mix over fish. Cover dish with aluminum foil and bake for 30 min.
While fish is cooking, cook potatoes in salted water. When done mash with 2 tbl hot olive oil, 3 tsp orange juice and 1 tsp orange zest. Add salt & pepper & thyme.
Serve the fish with sauce and with potatoes on the side.
