Exquisite Pumpkin Puree.... Brocoli too

Exquisite Pumpkin Puree.... Brocoli too
(You can make these two, serve them side by side and it will look fabulous!!!)

1 pumpkin (or 2 or 3) 2.2K or about 5 lbs, cut in pieces, skin and all (smaller the pumpkin the sweeter it will be).... remove the seeds and you can toast them separately for snacks.
milk, hot
butter
dark sugar / piloncillo
Nutmeg (optional as are the rest of the ingredients)
2 large onions, in slices and fried in butter until caramelized
4-5 brocoli bunches, cooked in salted water

Cook pumpkin in water, when tender it will separate easily and you can use the pulp. Add some milk a little at a time so it's not too runny (remember this is like mashed potatoes) and add butter. You can have it like this or you can add nutmeg too and either the dark sugar or some piloncillo. You can mold it and turn over on the plate and serve with the caramelized onions on top (for a salty/sweet combo) or not, up to you....
Cook brocoli, mash adding milk and butter and keep solid so it will mold too. Serve side by side and it will look wonderful.
Note: Great to serve with a baked chicken stuffed with garlic and onions and basted with a combination of red wine, butter and olive oil...Mmmmm
