Everyday Pesto Mexican Style

Pesto for everyday....
2 cups basil leaves or a combination with cilantro leaves too
2-3 cloves garlic, peeled
1/4 to 1/2 cup pine nuts (pinones) or pistachios, peanuts... I like almonds
1/2 cup (or more) parmessan cheese or Cotija, shredded
1/2 cup or more, olive oil
Pasta..... or put on anything
Put ingredients, except oil in food processor. Start adding oil in a stream, while blending and until you get the consistency you like. Plus you can have it drier or more liquid based on taste. Add salt and pepper to taste. As soon as pasta is cooked, you can use 2 tbls of cooking liquid too if you want, toss together.
NOTE: I have also added Mexican crema while tossing and shredded melting cheese because my son likes it like this.... Don't tell any Italians as this is a big NO NO....sorry. Also, if you want more "bite", double garlic cloves....
