Vegetarian Quiche

1 1/2 cups zuchinni
1/2 cup corn
2-3 tomatoes, chopped
1 tsp dill
1 cup shredded Swiss cheese or any other kind of melting cheese
1/4 cup chopped green onions or chopped onion
1/2 cup Bisquick mix
1 cup milk
1/4 tsp salt
1/8 tsp pepper
2 eggs
1 green bell pepper, sliced or chopped
Heat oven to 400 F/205 C. Grease 9-inch pie plate or square baking dish. Sprinkle filling in pie plate. Stir Bisquick mix, milk, salt, pepper and eggs until blended. Pour into pie plate. Bake 35 to 40 minutes or until knife inserted in center comes out clean. Cool 5 minutes. Garnish with tomato and bell pepper. Other options you can use are broccoli, asparagus, poblano chile strips, zuchinni, green beans, mushrooms, chaya, huanzontles, potato, etc While Swiss Cheese is lovely, it might be a problem here so you can switch to any other melting cheese, like: Chihuahua, Manchego, Asadero, Gouda.
