Colache or Zuchini Casserole

Colache.- Zuchinni Caserole:
1K Zuchinni Squash, cut off ends a little, chopped (circles or cubes)
1 med onion, chopped
2-3 garlic cloves, thru garlic press
2-3 Roma tomatoes, chopped
1-2 tsp dill (can be fresh or from jar)
1 cup, corn kernels w/ 1/4 cup liquid, if canned (fresh is good too or grilled)
1 cup shredded melting cheese (you pick)
2 tbl butter
1 tbl oil
Place butter and oil in pan and heat over med high heat. Put in onion then zuchinni, tomato, garlic, corn, dill and combine. Put canned corn liquid in now or 2-3 tbls water. Salt & pepper. If you want to bake then place in casserole dish, top with cheese and bake until cheese golden; if you want to do stove top way, then cover for 5-10 min until zuchinni STARTS to get tender, top with cheese, cover for 5 min so cheese will start melting and turn off heat. Allow to rest and flavors to meld. NOTE: You could add mushrooms, sweet red pepper, chili flakes, green pepper, etc.
