Coffee Cake

Figured if you got the Bisquick Baking mix you could use more recipes for it apart from Pancakes, here is something you can whip up in a couple of minutes and is good enough for company or pot-lucks or just to have coffee with....
Coffee Cake Topping:
1/3 cup Bisquick mix
1/3 cup packed brown sugar
1/2 tsp ground cinnamon
2 tbls firm butter or margarine
Optional: nuts, grated coconut, choc chips, etc....
Cake
2 cups Bisquick mix
2/3 cup milk
2 tbls sugar
1 egg
Heat oven to 375 F/ 190 C. Grease 9-inch round pan. In bowl, stir topping ingredients until crumbly, save. (could be cupcakes, etc. just watch in over since they cook faster).... In another bowl, mix cake ingredients until blended. Spread in pan. Sprinkle with topping. Bake 18 to 25 minutes or until golden brown. Stick a knife in and comes out clean (from the cake part and not the topping).
