Oven Baked Fried Chicken

I love Fried Chicken but would rather forgo the mess.... Here is a very easy recipe that gives you crunchy chicken without so much mess plus you don't have to stand in front of a hot stove and do it, this does itself while you do something else.... thanks to the people at Bisquick!
Oven Baked Fried Chicken
2-3 tbls margarine or butter (I've also used veg. oil)
2/3 cup Bisquick Pancake Mix or similar
1 1/2 tsp paprika or ground red chili
1 1/4 tsp salt
1/4 tsp pepper
cut-up chicken
Heat oven to 425 F/220 C. Melt margarine in rectangular baking dish or cookie tray, 13x9x2 inches, in oven. Put Bisquick, paprika, salt and pepper in large bowl and mix well, coat chicken. Place skin sides down in dish (dish and margarine should be hot). Bake 35 minutes; turn chicken. Bake about 15 minutes longer or until juice is no longer pink when centers of thickest pieces are cut. Tips: for more tender and juicy chicken, soak in milk 1 hour, then shake off milk (don't use paper towel) and use this humidity to get the flour to stick. I've also put aluminum foil on before I put the butter, oil on the tray and avoid cleanup altogether. I have also used a large zip lock back instead of a bowl and drop a piece of chicken at a time and do the covering there.....
