Another fabulous Italian Sauce....

Doesn't Ricotta / Saffron Gnocchi sound fabulous? Well, here is a sauce that would rock this dish....

Shrimp, Leek and Peas Wine Sauce.-
1 cup peas (preferably fresh, par boiled)
1 medium leek
1/4 cup olive oil
1/2 lb / 225g medium shrimp (peeled, deveined and cut in pieces)
salt & pepper
1/2 cup dry white wine
1 tbl butter
1/2 cup gnocchi/pasta cooking liquid (or chicken stock)

Cut off the root of the leek and most of the green, tough part; cut in half lengthwise and make thin ribbons; rinse really well in a colander insuring no dirt is left behind.
Heat the oil in a large skillet over med heat, add the leeks and cook for 7-8 min until they get soft, raise the heat to high and add the shrimp and cook for 1 min until they begin to turn color, add salt and pepper. Add the wine and cook for 1-2 min and then add the peas and stir. Add the 1/2 cup of cooking liquid to the sauce and add to the sauce, add the butter and lower heat to low until well combined. If using with gnocchi or pasta, add these to the pan at this time, mix well and adjust seasonings.
