Italian Sauce I love......

What can I say about Italian Sauces? I absolutely love their flavors and easy adaptability to almost anything you can think of. I will post 3 easy sauces that are big on flavor and you can make in a snap....

Mushroom, Prosciutto, Asparagus Cream Sauce.-
1/2 lb / 225g asparagus tips (preferably fresh and tender)
1/2 cup olive oil
1/2 lb / 225g mushrooms (cleaned, thinly sliced)
2 oz / 60g Prosciutto or Serrano Ham (diced)
1 cup heavy cream
1/2 cup chicken broth (preferably freshly made and not too salty)
Salt & fresh ground pepper
1 tbl butter
1/2 cup Parmesan cheese

Put oil in a large pan over high heat, once it starts to smoke put mushrooms in and stir for 2-3 min. to get golden; add the prosciutto and stir once or twice; add the cream, chicken broth, salt and pepper and bring to a boil then reduce the heat to medium and add the asparagus. Stir and cook for 3-4 min to get the sauce to med-thick consistency.
NOTE: This sauce would be perfect with Saffron Gnocchi (interested? let me know) but if you are using with pasta then it should already be ready since this is a quick sauce. Drain it and put it into the pan with the sauce, the butter and half of the grated cheese. If it seems too dry, add a little of the pasta cooking water to loosen up.
