The Easiest, Quickest Sauce yet....

Here is a sauce you can make in a couple of minutes that everyone will love so you can have it for everyday, but is so flavorful you could serve when company arrives too.....

Spaghetti with Tuna and Lemon Sauce.-
1 lb Spghetti or whatever pasta you like
1 can tuna, oil packed, don't drain (I've used both oil and water packed)
1 tbl olive oil
1/4 cup onion, chopped
2 garlic cloves, pressed
1/2 cup dry white wine
2 tbl parsley, chopped
salt and pepper
1/2 tsp red chili flakes (or to taste)
3-4 tbl butter

Cook pasta, drain and toss with the butter and some salt. Taste it, it should taste great. Set aside and cover.
In a large pan over high heat, put the olive oil and 1 tbl butter and heat. Add onion and cook 2-3 min to soften. Add garlic and chili flakes and mix for 1 min, you can add pepper here too. Add the tuna along with the liquid in the can and wine and 1 tbl butter and mix for 3-4 min. Add pasta to pan, toss and adjust seasonings. You can also add 1/2 green lemon juice.

NOTE: This is the basic sauce, but I also use this variation: Add: 1 tbl capers with 1 tbl caper liquid (brine) 2-3 anchovy fillets More pressed garlic cloves The anchovies and capers are added at the beginning and at the same time as the garlic.
