Rich Green Sauce for Fish and ?

Rich Green Sauce for Fish or ?

1 cup Basil leaves
1 cup Parsley leaves
3-5 cloves garlic
1 tbl capers
3 anchovy fillets
1 tbl Red Wine Vinegar
2 1/2 tbl Olive Oil
2 tsp Dijon Mustard
Salt & Pepper to taste

Usually the first 5 ingredients are chopped fine, put in a bowl to mix, then you drizzle in the vinegar and oil. Once done you season with the mustard and salt & pepper.
Great on the Pistachio Crusted Fish (see recipe)
