Got some small shrimp at the store and these are good either for cocktails, omelets, enchiladas, tacos or burgers..... Make sure your shrimp are clean. You can either chop fine or put them in the food processor and let that do the work. Add tomato, onion, garlic, cilantro, salt and pepper and chop until it holds together. You could put some serrano pepper for taste (if you just put one small one it won't be hot just add taste) but take the tail off and if you're scared then split it and take the seeds out too. If you want you could add some bread crumbs too. Use a plastic bag, split up the sides to make the patties so they won't stick to everything, then you can peel them off. You could even freeze like this in between the plastic then you have individual servings whenever you feel like a snack.... Put some butter in a pan, med heat and fry on each side, gently until the color starts to change. Put on a bun and add all the goodies....Mmmmm!
