Pomegranate Sauce for Duck (or?)

Pomegranates are extremely good for you and great tasting... Here is something lovely to use them for:
Pomegranate Sauce-
1 tbl vegetable oil
1/2 cup shallots, sliced (could use finely sliced red onion)
2 cups Port wine (or Jerez)
1 cup Red Wine
1 cinnamon stick
1/2 piece Star anise
1 inch sprig of Rosemary
2 cups chicken stock (if at all possible make it fresh)
1/2 cup Duck Demi-glace (if you've got it handy, if not, omit)
1 cup Pomegranate seeds
Salt & Pepper
1 tbl butter
In a med sauce pot, heat the oil and add shallots and sweat a little. Add the wines and bring to a boil. Add cinnamon, anise and Rosemary and reduce wine by 2/3; add chicken stock (demi-glace) and 3/4 cup of Pomegranate seeds and reduce this by half and until the sauce looks syrupy. Remove from heat and salt & pepper. Add the butter and wire whisk well. Strain sauce thru fine sieve or cheesecloth and keep hot for serving. You can use the leftover Pomegranate seeds as a garnish.
