Oyster Mushroom Ceviche

How about a new taste sensation.... Oyster Mushroom Ceviche
Ingredients:
500 grms de setas (oyster shrooms), very lightly cooked in water and salt (or raw)
1/2 cup catsup
1/4 cup chopped onion
1/4 cup chopped tomato
1/4 cup orange juice
1/4 cup chopped parsley
1/4 cup chopped jalapeno peppers (nacho style)
2 tbls olive oil
You can add lemon after tasting, your choice

Instructions:
Put everything in a bowl, let sit for 1/2 hour. Serve with avocado slices, salt & pepper to taste. Use a lovely cup or martini glass. (a shot of tequila on the side is a nice touch) You could also add cooked shrimp, octopus, chopped cucumber, cilantro instead of parsley, hot salsa, etc. experiment and exchange ingredients.
