Today is Mushrooms.....mmmmm

We love mushrooms, all kinds of fungi..... and in all kinds of presentations. Here are 3 mushroom dishes that can be either Appetizers or Side Dishes and I'm sure, will become favorites!

Muchroom and Bacon Satays.- (Serves 2)

8 Porcini mushrooms (can also use other types)
90 g (3oz) Smoked Bacon (1 per mushroom)
12 Bay leaves
1 garclic clove, peeled and pressed
2 Rosemary stems
Olive oil
Salt & pepper
Bamboo skewers (previously soaked in water)

In bowl, put 6 tbls oil and add Rosemary needles, garlic and a little salt & pepper. Mix well and allow to rest in a cool place for about 1/2 hour.
Cut off the thinnest piece of the base of the mushrooms (the part that is usually dry), rub with moist fine cloth to clean and envelop each in a bacon slice, then insert into the skewers, two on each skewer alternating with a bay leaf. Rub well with with olive oil mixture, put in a baking pan and bake in a 440 F/ 220 C oven for about 10 minutes.
