Sweet Peas Au Gratin

A nice side dish and accompaniment to any meal...
Sweet Peas Au Gratin-
3 tbls butter
1 cup minced onion
salt & pepper (white pepper would be nice)
2 tbl flour
2 cups milk
4 cups green peas (blanched or canned)
1/2 cup bread crumbs
4 oz / 125 grms sharp cheddar (or melting cheese)
NOTE: Bread crumbs can be seasoned with Creole Seasonings, paprika, garlic powder, oregano, thyme, salt & pepper or your favorite spices. Preheat oven to 400 F / 200 C. Grease baking dish with some of the butter. In large pan, over med heat melt the remaining butter, add the onions and season with salt & pepper. Stir for a couple of minutes, add the flour and cook for 1-2 min, stirring all the time. Add the milk and continue to stir and simmer for 4-6 min until it coats the back of a spoon. Add peas and mix. Pour into baking dish. This is the time to season the bread crumbs then you sprinkle the peas with the bread crumbs and top with the cheese. Place in oven until bubbly, about 10-15 min. Serve while warm.
