Poc Chuc from Yucatan

This is a very easy preparation for the traditional Poc Chuc found here.
You need lomo or pierna de puerco (tender pork meat for grilling such as pork loin)
sour oranges and lemons (or whitevinegar as substitute)
salt and pepper.
Juice a couple of oranges and some limes, put the salt and pepper, laurel leaves and mix well. Put pork meat (cut into strips or thin fillets for grilling) to marinade in this for a day or two, covered. Discard the marinade and grill meat on charcoal lightly and do not over cook. Serve with red onion slices (you can put the onion in a similar marinade for an hour or two), black beans and good tortillas. Very easy, tasty and healthy.....
